Water is of crucial importance. A masterpiece is a good coffee, brewed with good water. A wasted coffee is what we call the same coffee when made with low quality water. Water should be neither too basic or too acidic.
The machines provided by Excelsior feature a filter purification system to fix water imperfections. It is not only a matter of taste, but also a way to protect coffee machines. They contain heating coils and other parts which are sensitive to water impurities and limestone. If the water is too hard it could damage them.
